Everyone has left me! As I unloaded my dishwasher for the first time in almost a week, I said to myself, WHAAAAAAA! We had a few days of fun, that's for sure. Thanks Mom and Dad! Scott had to get up at 3:00 to drive to scout camp (high adventure) for the week. I think there are five boys going, Scott and one other adult leader. Scott likes the guy he is going with so, I do believe he will have some fun. It's just such a hassle getting there. So, it's just me and the kids.
Over the weekend, we had a sock crisis. Hayden couldn't find ANY socks. That boy! He (well they all are prone to it) leaves his socks "around", it drives me crazy. I had done laundry and he had just a couple pairs of matching socks. Where do they go? Hunter's started having holes, Hannah's were looking dinging. So, we re-loaded our sock drawers with new socks and undies! I love new socks and undies. There is something so fresh and nice about them. If we could just keep them that way, that would be nice.
I just finished up the last of the Black Bean Salsa for lunch. I like to eat it with tortilla chips, Triscuits or just by itself as a salad. It's good, but Hayden told me it "reeked" today when I opened the lid! Here is the recipe if you are interested.
Black Bean Salsa
2 cans black beans, drained and washed
2 cans (small) shoepeg corn
1 medium red onion, chopped
1/4 cup cilantro leaves, chopped
Combine the above
3-4 tbs. lime juice
2 tbs. olive oil
1 tbs. wine vinegar
1 tsp. salt
1/2 tsp. pepper
Whip together, add to first mixture, at least 3-4 hours before serving. Add 2 large tomatoes and 1 avocado diced just before serving.

I do love that black bean salsa. I make it whenever I entertain. Ha. I don't do much entertaining, but I make that salsa as often as possible. So yummy!!!

I love the fresh sock and undies. I wish I had an excuse to buy them more often, maybe I can intentionally lose them in the dryer. After all dryers are know for eating socks!
Thanks for the black bean salsa recipe. Looks SO yummy! We go through socks around here too. Seriously where do they go? It's the weirdest thing. Glad you restocked that is very fun.
i don't think its the dryer. i think its the kids. as a kid - i was loosing sock like crazy. as an adult, a single person, i don't lose them. its the kid factor, i swear!
That salsa looks good. What do you eat it with. I'm thinking the whole grain tostitos would be good with it.
