"We aren't having more Asian food are we??"

Hunter, when did you get so PC? Hunter asked what we were having for dinner. I don't know if you remember this, but I love "Chinese" food and Hunter does not. Any time were are having any sort of stir fry...anything in the "Chinese" family of foods, I get creative and think of other names to call it. Because if it's "Chinese" anything he starts to complain. (He used to love it, but got violently sick on Pei Wei Diner a couple years ago, and it ruined it for him.) Anyway, I start describing what's in the dinner, watching what I say, and He says, "We aren't having more Asian food are we?" It just made me smile to see how PC he is, without even trying.

Click here for this recipe. It was good. My kids (yes even Hunter, I think I'm winning him back on the whole Asian food thing) all liked it, especially the meat. They gobbled it up, the sauce on top was great! Next time I make it, I'm adding more carrots. I do think the cooking time is off, however. Watch the veggies so they don't burn. Also, at the end of the recommended cooking time, the veggies were done, but the meat wasn't. I simply took the veggies out, put the meat on another baking sheet, and let the meat cook for a few more minutes until it was done. I'm a sucker for pea pods, yum!

I got sick after eating there, too, and it ruined it for me. I still eat Chinese food but pass on Pei Wei.
